family 5k

A few months ago my sister Andrea announced that the Utah County Food Bank was having a 5k and she wanted our family to run. All of the girls jumped in and said they would. Brent quickly said yes when Andrea asked. My Dad immediately said no, and Bob said he was with my Dad. When it came time to sign up a few weeks ago, I bribed Bob with all of the best things, to run with us. I told him he could get a new golf club and he didn't take the bait, as he is already getting clubs from his brother. I thought it was a lost cause until one day Bob was talking about his love for McDonalds. I told him he could eat whatever he wanted after the race if he would run it. He finally agreed!

This morning we woke up early and met in Provo. When my parents got out of the car, my Dad was wearing work out clothes and we were happy to hear that he was going to do the race. Bob and I got our bib numbers and new shirts. I gave the bibs to Bob while Ayrika and I changed our shirts. Once we all had our shirts and Bibs on, we were ready. My Dad and I ran some of our stuff back to the car and he said he was worried my Mom would start running with the other people, and leave him behind. Sure enough once we started running my Mom started jogging.

In the last year I have ran a couple 5ks and I ran them in 35 and 33 minutes. Since I have been attempting to eat healthy and exercise more often, I made a goal of running the race in under 30 minutes. I am happy to say that I ran the race in 27.05. My brother in law Brent beat me, but only by a few seconds. It was fun to cheer the rest of the family on, as they came across the finish line.

When they were announcing the winners for my age group the 1st place was really close to my time. And then they announced the 2nd and 3rd place times and they were 27 minutes plus. I wasn't expecting to win, but was confused as to why they hadn't called my name, according to my time. Andrea and I went and checked out the scores, and I had ended up wearing Bob's bib, and he had worn mine, so our times were mixed up.

So unofficially I took 2nd place in the Women's 22-30 age division. I am so proud of myself. I know my time wasn't great compared to most runners, but I am proud of myself. I am also proud of my whole family. My parents ran/walked the race and both ended up with a better time then they had originally thought. I am super proud of Bob, because he didn't do any training beforehand and did a great job. We are looking forward to our next 5k, the annual Thanksgiving 5k.

#2

Today we are celebrating our 2nd anniversary. We didn't do much today other than relax because we spent the weekend eating lots of good food and enjoying being with one another. I always like to go back and see how far we've come in just our short while. Here are a few pictures.

We have had so much fun the past two years. And I love Bob more and more each day. He helps with the laundry, makes the bed, and lots of other things around the house without being asked. He doesn't complain when I make healthy dinners that don't look too appetizing. He is a hard worker, and we enjoy our time together on the weekends. He is always there for me, and is a wonderful husband. Love you babe!

school post

Yesterday when I was gone, one of my students decided to write a note to another student in the class. The note included all of the swear words that he could think of. The list had words that start with A and ends with hole, B, and a 3rd grade spelling of the S word. The last word on the list was Witch Hole. I had no idea that my student knew more swear words than I did. But today, I learned a new one today. The sub just left the paper on my desk, having no idea of what to do with the student.

This morning I had duty, which was to watch the playground. When it's raining/snowing (in winter months or the end of May) we watch all of the students in the gym. Luckily for me, I got to watch 350 kids in the gym. It was so chaotic and I was not happy about it. Then one of my students appeared and had this little beauty for me. She said it was a fruit and candy bouquet. (With a few cheese puffs....) It definitely made my day. All of the other students were amazed that she had made it herself.

Since it rained all day yesterday, the kids were inside for recess. One of my students decided to do a recap on what his favorite part of recess was. He told me that they played Connect Four. (This is the coveted game in the class, they all fight over it.) But yesterday they played for Viking Dollars. My kids were gambling while playing Connect Four. What is the world coming to?

This little beauty I got after spring break. But I have forgotten to mention it. My student got it on his Spring break trip to California. He handed me it in a plastic bag and said, "My Mom told me to give you this." I keep it on my desk, and it motivates me daily, to do my best. Especially during these last few weeks. PLEASE TELL THE RAIN TO STOP! I can't handle any more inside recess.

highlights of a bad day...

Today I had a bad day. But there were a few things that boosted my spirits here and there.

I bought a pair of capris in a size I haven't worn in years.

Found a couple of books at DI that I'm excited to read.


Ate lunch with friends at Olive Garden.

Spent time here.

Used some of my favorite ingredients to make dinner. (Sadly, Bob didn't like it. But more leftovers for me!)
Of course it is from Our Best Bites. So easy, healthy, and so good.

Happy Mother's Day

This year for Mothers day I made dinner for my Mom and family. (Why haven't I done this in the past? I am a slacker daughter.) Along with the Mexican feast, I made fruit dip, blondies, and blueberry-lemon cupcakes.


My Mom is an amazing woman. She will always drop whatever she is doing to help others out. She has spent the last month taking care of my Grandma who had to have emergency surgery on Easter.
She is the best cook I know. She just puts things together and they always taste amazing. She takes care of our family and is a great example to me.

Before we ate lunch, we were able to talk to Dan for an hour or so. It was so fun to hear his English accent and hear about his recent investigators. He is loving life and enjoys the work. We were happy to hear that he was doing so well.

This was my first time trying to make big swirly frosting. It's not beautiful by any means. But, the blueberry helped disguise all of my mistakes. I had a hard decision to make and didn't eat one. Instead I had one of my Aunt's delish homemade peanut butter bars.

love me some Mexican food

If anyone ever asks what my favorite food is, I will always say Mexican. (If you didn't know, all of the trips my family makes to Mexico- are usually for the food. We love hitting up Taco stands and getting the real deal. I think I need a taco right now.) So when I ordered my Bountiful Basket the other week, I decided to order the "Mexican Pack" for $7.50 and the tortillas for $10. Boy was I in for a surprise of a lifetime when I picked my basket up.


3 dozen large huge flour tortillas. (I'll be making cafe rio salads sometime soon!)
2 dozen small flour and 2 dozen small corn tortillas.

Jalapenos, Anaheim peppers, green onions, tomatillos, avocados, squash, garlic, limes, onions cilantro, and garlic.
What a steal... I was SO happy with my Mexican pack. So with all of these ingredients, I planned my Mother's Day meal for my family.

I made this tomatillo salsa (I got the recipe from my Aunt Carrie. Yummy!)

Tomatillos (I put mine in the oven for 30 minutes on 400 to soften up. I used 8 because that was what I had, but I know you can also use the canned ones too.)
1 bunch cilantro- I just cut off the stems at the bottom
1/2 a Jalapeno
1/4-1/3 cup sugar
Blend all ingredients in your blender and then refrigerate until cold.  Yes, it's that simple.

I made homemade salsa (Luckily I got tomatoes in my regular basket)

We made guacamole using the avocados and some fat free greek yogurt.

Some of my family used the large tortillas to make burritos and some used the small to make tacos. It was so yummy.

Later in the week I used the rest of my limes to make Brazillian Lemonade, from Our Best Bites.

The only thing I still have left is the squash. Maybe I'll make something with it for lunch.

Count down to Summer!

We are reviewing for the end of the year tests... wow I can't believe that they are so soon! We were going over fractions and I was asking the students what the top number of a fraction was called. I gave them a small hint by saying Nuuuu (as in Numerator) when a girl in my class yelled out NEW TESTAMENT!

My students are ready for school to be done.  Especially with the weather ups and downs, they get a little bit crazier everyday.

Yesterday we started working on our Mother's Day project. I had each of the students draw a picture of their mom. I was doing an example on the board of the size (my class tends to use only a small portion of the paper) and drew a picture of my face. One of my students shouted out, hey that's you, not your mom! And another kid said, You're not a Mom! Then the sweetest girl in my class said, YES she is! She is a Mom to 29 kids. I loved her so much in that moment, for realizing how much I care for each of my students.

2 weeks ago we had teacher appreciation week and my class was so kind to me. Especially my room Mom. On the first day, one of my girls Jacky came up to me and asked me if I was still on my diet. (They knew I was eating healthy because I never eat their birthday treats...) I looked at her and asked why? She pulled out this huge chocolate bunny and said, "Well, I brought this for you for Teacher Appreciation." Not only do I get spoiled, but Bob gets all the leftovers! 


I don't know who many days are left until school is over. I don't want to start counting down too early. We have a lot of things to do before school can be over. I am excited though.... don't get me wrong!
